To start off your experience, you are presented with a PDA-like electronic wine list as the vast list would require the staff to lug around dictionary-sized printed lists. After selecting your libation, you are able to watch the "wine-fairies" repel in the four-story wine tower to retrive your bottle of choice. The higher the price, the higher the wine fairies go.
While the feeling and décor of the room is very European, the food is all-American. To start your meal, we recommend the black mission fig and Roquefort tart which is served warm with shaved Serrano ham.
For a main course, feast on some of the delicious seafood for which Palmer is so well known. Although the Las Vegas rendition of Aureole is missing the New York favorite - the scallop sandwich - the fare choices are aplenty. We thoroughly enjoyed the sautéed fluke fillet which was accompanied by caramelized cauliflower, ruby grapes and a walnut-caper brown butter. Or you can´t go wrong with the roasted rack of lamb, paired very nicely with a tender lamb-stuffed Campari tomato, braised flageolet beans, Nicoise olives and tomato preserves.
With Aureole´s ecletic and diverse dessert menu, be sure you leave some room for the fallen bittersweet chocolate soufflé or tropical fruit carpaccio - a combination of pina colada and papaya lime sorbet with toasted coconut crisp - you will not be disappointed.
A destination that is suitable for the most discerning of wine connoisseurs as well as well traveled tongues, Aureole can be enjoyed by all.
